A refrigeration thermostat measures air, and air changes temperature much faster than food does. Every door opening triggers a compressor start that the stock did not need.
CUES places a food simulant next to the sensor so the control system responds to the temperature of the product instead. Run time falls. The stock stays at the same temperature.
